Ingredients

  • 2 cups pancake mix
  • 1 cup milk
  • 4 eggs
  • 1 cup flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup vegetables (bell peppers, spinach, etc.)
  • 1 cup cheese
  • 1 cup breakfast meats (bacon, sausage, etc.)
  • 1 cup fruits (bananas, berries, etc.)
  • 1 cup oats
  • 1/2 cup yogurt

Instructions

  1. Combine the pancake mix ingredients in a mixing bowl for a solid base.
  2. Add milk and eggs to the mix. Stir until your batter is smooth and free of lumps.
  3. Preheat your skillet over medium heat. Pour the batter to form pancakes, and watch for bubbles on the surface before flipping. Cook until both sides are golden brown.
  4. Whisk the eggs in a separate bowl and pour them into another skillet. Stir gently until they’re scrambled to perfection.
  5. Mix oats, milk, and yogurt in a container for overnight oats and refrigerate overnight.
  6. Assemble your breakfast bowls by layering the scrambled eggs, sautéed vegetables, and your choice of breakfast meats.
  7. Top everything off with sliced fruits or your favorite toppings for an added burst of flavor.

Notes

Use a non-stick skillet for pancakes to achieve the best golden-brown color without sticking. Feel free to substitute ingredients based on your preference.
