High-Protein Freezer Breakfast Burritos

These breakfast burritos are perfect for busy mornings, packed with protein and convenient for meal prep.

Ingredients

  • 8 large flour tortillas
  • 8 eggs
  • 1 pound lean ground beef
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 tablespoons chopped fresh parsley or cilantro (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and season with salt and pepper.
  2. In a separate nonstick pan, scramble the eggs over medium-low heat until fluffy and cooked through.
  3. Using the same skillet from the beef, add the diced red bell pepper and red onion, sautéing until they begin to soften.
  4. Lay out tortillas on a clean surface, evenly dividing the scrambled eggs, ground beef, sautéed veggies, cheddar cheese, and optional herbs among the tortillas.
  5. Fold the sides of each tortilla in and roll them tightly to form burritos.
  6. Wrap each burrito in parchment paper and then in foil, or place them into freezer-safe bags.
  7. Freeze the burritos for up to three months. To reheat, microwave each burrito for 2–3 minutes or bake at 375°F for 20–25 minutes until heated through.

Notes

For a lighter option, swap ground beef for turkey or chicken, or use plant-based substitutes for a vegetarian version.
