A delightful breakfast bake packed with protein, combining fresh blueberries and zesty lemon for a nutritious start to your day.

Ingredients

  • 1 cup oats
  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 1/2 cup blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 lemon, zest and juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your favorite baking dish.
  2. Mix together oats, cottage cheese, mashed bananas, blueberries, eggs, honey or maple syrup, lemon zest, lemon juice, vanilla extract, baking powder, and a pinch of salt in a large bowl until well-blended!
  3. Pour the mixture into the prepared baking dish, spreading it out evenly.
  4. Bake in the oven for about 25-30 minutes or until the top is golden and feels firm to the touch.
  5. Allow it to cool slightly before slicing into portioned squares.
  6. Serve warm, or store in the fridge for meal prep!

Notes

Don’t overmix to keep the texture light and fluffy. You can substitute cottage cheese with Greek yogurt or use agave syrup instead of honey.
