A delicious and nutritious high-protein breakfast or snack featuring creamy cottage cheese, eggs, and sweet mixed berries.

Ingredients

  • 2 cups Full-Fat Cottage Cheese
  • 3 large Eggs
  • ½ cup Almond Flour
  • ¼ cup Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Baking Powder
  • 2 cups Mixed Berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish.
  2. Add the cottage cheese and eggs to a blender and blend until smooth and creamy.
  3. Pour the blended mixture into a mixing bowl.
  4. Stir in the almond flour, honey or maple syrup, vanilla extract, lemon zest, and baking powder. Mix until well combined.
  5. Fold in the mixed berries gently until evenly incorporated.
  6. Pour the batter into your prepared baking dish and spread it out evenly.
  7. Bake for 35–40 minutes, or until the top is golden and the center is set.
  8. Allow the bake to cool for 20–30 minutes before slicing into squares and serving.

Notes

For a lighter option, low-fat cottage cheese can be used, but expect a different texture. Experiment with different berries and add spices for variation.
