A delightful and nutritious breakfast bake packed with flavor, combining cottage cheese and vibrant berries.

  • 2 cups Full-Fat Cottage Cheese
  • 3 large Eggs
  • ½ cup Almond Flour
  • ¼ cup Honey or Maple Syrup (or sugar-free alternative)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Baking Powder
  • 2 cups Mixed Berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish.
  2. Blend the cottage cheese and eggs in a blender until smooth and creamy.
  3. Transfer the mixture to a large bowl and stir in the almond flour, sweetener, vanilla extract, lemon zest, and baking powder until combined.
  4. Gently fold in the mixed berries.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 35–40 minutes or until the top is golden and the center has set.
  7. Cool in the dish for 20–30 minutes before slicing into squares.
