A comforting Italian-American classic that features juicy chicken breasts with a crispy coating, rich marinara sauce, and gooey melted cheese.

  • 24 ounces boneless skinless chicken breasts (about 4 (6-ounce) pieces)
  • 1/2 cup light mayonnaise
  • 3/4 cup Parmesan cheese, shredded
  • 1 1/2 cups Panko bread crumbs
  • 1 teaspoon dried oregano, ground
  • 1 teaspoon dried basil, ground
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the light mayonnaise, Parmesan cheese, oregano, basil, salt, and black pepper in a medium bowl. Mix until well-blended.
  3. Coat each chicken breast generously with the mayonnaise mixture.
  4. Dredge the coated chicken in Panko breadcrumbs, ensuring an even coating.
  5. Place the breaded chicken onto a lined baking sheet.
  6. Bake the chicken in the oven for about 25-30 minutes, or until cooked through and golden brown.
  7. Spoon 1/4 cup of marinara sauce over each piece of chicken.
  8. Sprinkle mozzarella cheese on top of the sauce.
  9. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  10. Let the Chicken Parmesan cool slightly before serving.

Notes

For a twist, consider using Greek yogurt instead of light mayonnaise or gluten-free breadcrumbs for a gluten-sensitive option. Serve over pasta with garlic bread and salad.
