Homemade Vanilla Beignets

Delightful, fluffy treats perfect for breakfast or an afternoon snack, reminiscent of a cozy café in New Orleans.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, mix the milk, eggs, vanilla extract, and melted butter until thoroughly blended.
  3. Gradually pour the wet mixture into the dry ingredients, stirring gently until a cohesive dough forms.
  4. Turn the dough out onto a floured surface and knead it gently until smooth and elastic, about 2 minutes.
  5. Roll out the dough to about 1/2 inch thick and cut it into squares or your preferred shapes.
  6. Heat oil in a deep fryer or heavy pot to 350°F (175°C) for optimal frying.
  7. Fry the beignets in small batches until golden brown on both sides, about 2-3 minutes.
  8. Remove the beignets and place them on paper towels to drain excess oil.
  9. Dust with powdered sugar right before serving. Enjoy!

Notes

For variations, try adding lemon zest or different extracts. Store in an airtight container at room temperature for up to 2 days or freeze for longer storage.
