  • 8 chicken thighs (skinless and boneless, ~2 lbs)
  • 2 tbsp cornflour (cornstarch)
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp fresh parsley (finely chopped, for garnish)
  • ½ tsp chili flakes (optional)
  • Boiled rice (for serving)

Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry with paper towels to ensure that they’re not soggy and will sear beautifully.
  2. Coat the Chicken: In a large bowl, toss the chicken with cornflour, salt, and pepper until it’s all evenly coated.
  3. Heat the Pan: In a pan over medium-high heat, add the vegetable oil and unsalted butter.
  4. Sear the Chicken: Place the thighs in the pan and sear for about 5-6 minutes on each side, until golden brown and cooked through.
  5. Sauté the Garlic: Remove the chicken and set it aside. In the same pan, add the minced garlic and sauté until fragrant.
  6. Make the Sauce: Pour in the honey, chicken stock, rice vinegar, and soy sauce. Stir everything together until well combined.
  7. Return the Chicken: Add the chicken back to the pan, coating it in the sauce, and cook for an additional 2-3 minutes.
  8. Garnish and Serve: Finish with a sprinkle of chopped parsley and chili flakes if you like a touch of heat!

Notes

For a spicy twist, add a tablespoon of sriracha to the sauce. Leftovers can be refrigerated for up to three days.
