A quick and flavorful Instant Pot recipe featuring tender chicken thighs in a sweet and savory honey garlic sauce, perfect for weeknight dinners.

Ingredients

  • 1 1/2 lbs. chicken thighs (4 chicken thighs)
  • Salt
  • Ground black pepper
  • 1 1/2 tablespoons cooking oil
  • 4 cloves garlic (minced)
  • 1 tablespoon chopped parsley
  • 3 tablespoons honey
  • 1 teaspoon sugar (or brown sugar)
  • 2 tablespoons soy sauce
  • 3 tablespoons water (or chicken broth)
  • 3 dashes cayenne pepper

Instructions

  1. Generously season the chicken thighs with salt and black pepper. Set them aside.
  2. In a small bowl, combine honey, sugar, soy sauce, and water (or chicken broth). Stir until fully dissolved. Set aside.
  3. Set your Instant Pot to Sauté mode. Once heated, add 1 tablespoon of cooking oil.
  4. Place the chicken thighs in the Instant Pot, skin-side down first. Sear for about 3-4 minutes per side until browned.
  5. Keep the chicken in the pot and add the remaining 1/2 tablespoon of oil along with the minced garlic. Sauté for about 30 seconds until fragrant.
  6. Pour the prepared honey garlic sauce over the chicken in the pot. Secure the lid, select Manual mode, and set the pressure to High for 10 minutes.
  7. After cooking, perform a Quick Release, and carefully remove the lid once the valve has dropped.
  8. Stir in the chopped parsley and serve immediately, drizzling the chicken with sauce.

Notes

For extra flavor, marinate chicken in honey sauce for 30 minutes before cooking. Let the Instant Pot release pressure naturally for a few minutes to retain moisture.
