  • 2 large boneless, skinless chicken breasts (about 68 ounces each)
  • Freshly grated Parmesan cheese
  • Panko breadcrumbs
  • All-purpose flour
  • 2 large eggs
  • Olive oil spray
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels. If they are thick, pound them to an even ½-inch thickness for even cooking.
  2. Set up dredging stations: In three shallow bowls, fill one with all-purpose flour, one with whisked eggs, and the last with a mix of Panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
  3. Coat the chicken: Dredge each chicken breast in flour, dip it into the egg, and then coat it with the Panko-Parmesan mixture, pressing down gently to adhere.
  4. Preheat the air fryer to 375°F (190°C). Lightly spray the basket and both sides of the coated chicken breasts with olive oil.
  5. Air fry the chicken: Place the chicken in a single layer in the air fryer basket. Cook for 8-10 minutes, then flip, spray the other side with olive oil, and continue cooking for another 5-8 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  6. Rest before serving: Let the cooked chicken rest for 3-5 minutes before slicing and serving.

Notes

Feel free to substitute with gluten-free breadcrumbs for a gluten-sensitive option. For the best flavor, always use freshly grated Parmesan cheese.
