Easy and delicious spinach bagels packed with protein-rich cottage cheese and nutritious spinach.

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach (chopped)
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, olive oil, and egg. Blend until smooth.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Carefully fold in the chopped spinach and mozzarella cheese.
  6. Shape the mixture into about 8 bagels, wetting hands if necessary.
  7. Space the bagels on the prepared baking sheet and bake for 20–25 minutes, or until golden brown.
  8. Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container at room temperature for a day or two, or in the fridge for about a week.
