A simple yet delicious oven-baked chicken dish coated in crispy breadcrumbs, Parmesan, and topped with marinara sauce.

  • 2 pounds Chicken Breast (can be substituted with turkey or eggplant)
  • 1 cup Breadcrumbs (gluten-free for a gluten-free version)
  • 1/2 cup Parmesan Cheese (freshly grated)
  • 1 cup Mozzarella Cheese (low-fat option available)
  • 2 cups Marinara Sauce (spicy marinara for a kick)
  • 1 spray Cooking Spray

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly coat a baking dish with cooking spray.
  3. Gently tenderize the chicken breasts and season with salt and pepper.
  4. Mix the breadcrumbs with half of the grated Parmesan cheese in a bowl.
  5. Dip each chicken breast in the breadcrumb mixture, ensuring they are evenly coated.
  6. Place the coated chicken in the baking dish with space between each piece.
  7. Spoon the marinara sauce evenly over the chicken.
  8. Sprinkle mozzarella cheese and the remaining Parmesan cheese on top.
  9. Cover with foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes until bubbling and golden brown.
  11. Allow to sit for a few minutes before serving to let the flavors meld.

Notes

Serve with pasta, salad or garlic bread. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months.
