A low-carb twist on the classic Reuben sandwich, featuring crispy cheese, savory corned beef, tangy sauerkraut, and zesty mustard.

Ingredients

  • Cheese (Swiss or cheddar)
  • Corned beef
  • Sauerkraut
  • Mustard
  • Butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a skillet over medium heat.
  3. Lay cheese slices on a baking sheet and bake them until melted and slightly crispy.
  4. Once removed from the oven, let the cheese cool for a moment. Then, top each slice with corned beef, sauerkraut, and a smear of mustard.
  5. Roll each slice tightly and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
