  • 1 Tbsp olive oil
  • 1 Tbsp parsley (optional)
  • 1/2 lemon (optional)
  • 2 large eggs
  • 1 garlic clove (minced)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup Parmesan cheese (grated)
  • 3 Tbsp all-purpose flour
  • 8 Tbsp unsalted butter
  • 2 garlic cloves (minced)
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 1/4 tsp ground black pepper

Instructions

  1. Slice the chicken breasts in half lengthwise for thinner pieces. Use a meat mallet to pound them gently to an even thickness.
  2. In a bowl, whisk together the eggs and one minced garlic clove, then set it aside.
  3. In another bowl, combine the grated Parmesan, flour, Italian seasoning, salt, and black pepper.
  4. Dip each piece of chicken into the egg mixture, then coat it in the Parmesan mixture.
  5. Heat olive oil in a large skillet over medium heat. Sauté the breaded chicken for 4-5 minutes on each side until golden and cooked through.
  6. In a separate saucepan, melt the unsalted butter and sauté the two minced garlic cloves until fragrant.
  7. Stir in chicken broth, lemon juice, and black pepper, allowing the sauce to thicken slightly.
  8. Pour the lemon butter sauce over the chicken, ensuring each piece is well coated.
  9. Garnish with lemon slices and a sprinkle of parsley before serving.
