  • 1 1/2 lb chicken breast (2 large, patted dry)
  • 1 Tbsp olive oil
  • 1 Tbsp parsley (to garnish, optional)
  • 1/2 lemon (sliced for garnish, optional)
  • 2 large eggs
  • 1 garlic clove (minced)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup Parmesan cheese (grated)
  • 3 Tbsp all-purpose flour
  • 8 Tbsp unsalted butter
  • 2 garlic cloves (minced)
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 1/4 tsp ground black pepper

Instructions

  1. Cut the chicken breasts in half lengthwise. Pat dry with paper towels and pound to an even thickness.
  2. In a bowl, whisk together eggs, one clove of minced garlic, Italian seasoning, salt, and black pepper.
  3. In another bowl, mix grated Parmesan cheese and all-purpose flour.
  4. Dip each chicken piece in the egg mixture, then coat in the Parmesan mixture.
  5. Heat olive oil in a skillet over medium-high heat; cook chicken for 4-5 minutes on each side until golden brown and cooked through.
  6. In a saucepan, melt butter over medium heat. Sauté remaining minced garlic until fragrant.
  7. Add chicken broth and lemon juice; let simmer for 2 minutes.
  8. Drizzle the sauce over the chicken, garnish with lemon slices and parsley before serving.

Notes

Pound chicken evenly for uniform cooking. Avoid overcrowding the pan for crispy chicken.
