  • 2 tablespoons olive oil
  • 1 lemon (juice and zest)
  • 2 teaspoons paprika
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the olive oil, lemon juice, lemon zest, paprika, minced garlic, salt, and pepper to create the marinade.
  3. Toss the chicken thighs in the marinade until they are well coated.
  4. Place the marinated chicken in a baking dish and roast for 25-30 minutes.
  5. Garnish with fresh parsley before serving.

Notes

For best results, use a meat thermometer to ensure an internal temperature of 165°F (75°C). You can also marinate the chicken for a couple of hours for more flavor.
