  • 1 cup cooked bacon or sausage, chopped

Instructions

  1. Heat a generous drizzle of olive oil in a large skillet over medium heat.
  2. Toss in the diced potatoes and cook them until golden brown and fork-tender—this should take about 10-15 minutes. Don’t forget to season with salt and pepper!
  3. Add the diced bell pepper and onion, sautéing until softened, around 5 minutes.
