A comforting dish of creamy potatoes, crispy bacon, and melted cheese that is perfect for any gathering.

Ingredients

  • 2 pounds of potatoes
  • 4 slices of bacon
  • 1 cup of shredded cheese (cheddar or your choice)
  • 1/2 cup of sour cream
  • 1/4 cup of green onions, chopped
  • Salt and pepper to taste
  • Butter (optional, for creaminess)

Instructions

  1. Peel and cut the potatoes into even chunks, place in a pot, cover with cold water, and add a pinch of salt. Bring to a simmer and cook until fork-tender, about 12–15 minutes.
  2. While the potatoes are cooking, heat a skillet over medium heat and fry the bacon until crispy. Drain on paper towels and chop into bits.
  3. Drain the potatoes well and return them to the pot, allowing them to steam for a minute to remove excess moisture.
  4. Begin mashing the potatoes and mix in butter and sour cream. Season with salt and pepper.
  5. Gently fold in the chopped bacon, shredded cheese, and green onions until the cheese melts into the warm potatoes.
  6. Taste and adjust the seasoning if needed, serve warm garnished with extra cheese or green onions if desired.

Notes

For a vegetarian version, substitute bacon with turkey bacon or omit it completely. Try different types of cheese for varied flavors.
