A comforting and versatile breakfast casserole that can be prepared in advance, perfect for busy mornings or special occasions.

Ingredients

  • 6 eggs
  • 2 cups milk
  • 1 cup shredded cheese
  • 1 loaf bread, cubed
  • 1 pound cooked sausage or bacon, crumbled
  • 1 cup chopped vegetables (e.g., bell peppers, onions, spinach)
  • Salt and pepper to taste
  • Optional: herbs and spices (e.g., thyme, paprika)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and milk in a large mixing bowl. Season generously with salt and pepper.
  3. Grease a baking dish to prevent sticking.
  4. Layer the bread cubes evenly at the bottom of the dish.
  5. Sprinkle the crumbled sausage or bacon over the bread, followed by the chopped vegetables.
  6. Pour the egg mixture evenly over the layers.
  7. Finish off with a generous sprinkle of shredded cheese on top.
  8. Cover the dish with foil. You can refrigerate it overnight at this point or bake it immediately.
  9. Bake covered for 30 minutes.
  10. After 30 minutes, uncover and continue baking for an additional 15-20 minutes, until the casserole is set and golden brown.
  11. Serve warm and enjoy!

Notes

Store leftovers in the fridge for up to 3 days or freeze for longer storage. Allow to cool completely before wrapping tightly.
