Ingredients

  • Rolled oats
  • Milk or yogurt
  • Fruits (bananas, berries)
  • Honey or maple syrup
  • Eggs
  • Bread (for sandwiches)
  • Vegetables (spinach, bell peppers)
  • Cheese
  • Baking powder
  • Flour (for muffins)
  • Salt

Instructions

  1. Combine rolled oats with your choice of milk or yogurt. Add fruits and drizzle with honey or maple syrup. Cover and refrigerate overnight.
  2. Preheat oven to 350°F (175°C). In a bowl, whisk together flour, eggs, and baking powder. Pour mixture into a muffin tin and bake for 20-25 minutes.
  3. Whisk together eggs and milk. Stir in chopped vegetables and cheese. Pour mixture into a baking dish and bake until set.
  4. Scramble eggs with chopped vegetables and cheese in a skillet. Place mixture between two slices of bread and grill until golden brown.

Notes
