Delicious and customizable breakfast burritos filled with scrambled eggs, bacon, seasoned potatoes, and cheese, perfect for meal prep.

Ingredients

  • 8 large eggs
  • 1 cup diced cooked bacon
  • 2 cups seasoned diced potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 8 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. Crack the eggs into a large bowl and whisk them together. Season with salt and pepper according to your taste.
  2. Heat a skillet over medium heat. Pour in the eggs and scramble until they are fully cooked, then remove from heat.
  3. In another skillet, cook the diced bacon until crispy. Once done, add the seasoned potatoes and cook until they are golden brown.
  4. Lay the tortillas out on a clean surface.
  5. In the center of each tortilla, place a portion of scrambled eggs, crispy bacon, seasoned potatoes, and shredded cheese.
  6. Fold the sides of the tortilla inward and roll it tightly to securely enclose the filling.
  7. Wrap each burrito in plastic wrap or foil and place them in a freezer-safe bag. These can be stored in the freezer for up to 3 months.
  8. To reheat, unwrap the burrito and microwave for 1-2 minutes, or until heated through.

Notes

These burritos can be customized with different proteins or vegetables. Serve with salsa, avocado, or sour cream for added flavor.
