Delicious breakfast burritos filled with scrambled eggs, bacon, seasoned potatoes, and cheese, perfect for busy mornings.

Ingredients

  • Flour tortillas
  • 4 Eggs
  • 4 slices Bacon
  • 2 cups Seasoned potatoes
  • 1 cup Cheese
  • Salt, to taste
  • Pepper, to taste
  • Cooking oil or butter

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and let drain on paper towels.
  2. Scramble the eggs in the same skillet, seasoning with salt and pepper until just set.
  3. Add the seasoned potatoes to the skillet, cooking until golden brown and crispy.
  4. Layer the tortillas with the cooked potatoes, scrambled eggs, pieces of bacon, and cheese.
  5. Roll the tortillas up tightly, folding in the edges to secure the filling.
  6. Wrap each burrito in foil or plastic wrap.
  7. Freeze the wrapped burritos until ready to enjoy.
  8. Microwave one burrito for 1-2 minutes until heated through when ready to eat.
