A delightful breakfast or snack combining the nutty crunch of pecans with the sweetness of maple syrup.

  • 2 cups oats
  • 1 cup pecans, chopped
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil or butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine oats, chopped pecans, salt, and optional cinnamon.
  3. In a separate bowl, whisk together the melted coconut oil or butter, maple syrup, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients. Stir until everything is evenly coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for about 20-25 minutes, stirring halfway through until it turns golden brown.
  7. Once done, let it cool completely before storing in an airtight container.
