A creamy and flavorful chicken dish that’s easy to prepare, perfect for impressing guests or treating yourself on a cozy night.

  • 46 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: Fresh basil or red pepper flakes for garnish

Instructions

  1. Pat the chicken thighs dry and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat and sear the chicken for about 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
  4. Lower the heat and stir in heavy cream; gradually mix in parmesan until smooth.
  5. Fold in chopped sun-dried tomatoes and let simmer for 2-3 minutes.
  6. Return the chicken thighs to the skillet, nestling them into the sauce. Spoon some sauce over the top, cover, and simmer on low heat for 10-12 minutes or until chicken reaches 165°F.
  7. Garnish with fresh basil or red pepper flakes and serve hot.

Notes

For a twist, consider using chicken breasts, but note that thighs are more flavorful and tender.
