Marry Me Chicken is a heartwarming dish featuring tender chicken in a creamy sauce enriched with sundried tomatoes and spices, perfect for cozy dinners.

  • 4 chicken breasts (boneless and skinless)
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 1/2 cups chicken broth
  • 3 tablespoons cornstarch
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon paprika
  • 1/2 cup sundried tomatoes (drained and chopped)
  • 1 cup sweet corn
  • 1/2 cup parmesan cheese (freshly grated)
  • A few basil leaves (chopped)

Instructions

  1. Combine the salt, garlic powder, onion powder, paprika, and black pepper in a small bowl.
  2. Pat the chicken breasts dry with paper towels and generously season both sides with the dry rub mixture.
  3. Heat olive oil in a large skillet over medium-high heat and melt the butter together.
  4. Sear the chicken breasts until golden brown on both sides, about 5-7 minutes, then remove from the skillet and set aside.
  5. Whisk the chicken broth and cornstarch until smooth in a medium bowl.
  6. Pour the cornstarch slurry into an 8-quart slow cooker. Whisk in the heavy cream, minced garlic, Italian seasoning, salt, black pepper, red pepper flakes, and paprika.
  7. Add the seared chicken along with any juices from the skillet into the slow cooker.
  8. Top with chopped sundried tomatoes and sweet corn. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  9. Transfer the chicken onto a plate and stir in the parmesan cheese to the sauce in the slow cooker until well combined.
  10. Return the chicken to the slow cooker, thoroughly coating it with the sauce. Sprinkle with fresh basil, turn off the heat, and serve immediately.

Notes

For extra flavor, consider marinating the chicken in the spice rub for a few hours before cooking. You can also substitute sour cream for a tangy sauce.
