A comforting and elegant dish featuring juicy chicken breasts in a creamy sauce with sun-dried tomatoes, perfect for date nights or family gatherings.

  • 4 thin sliced boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 Tablespoons olive oil
  • 2 Tablespoons butter
  • 4 cloves garlic (minced)
  • 1 cup unsalted chicken stock
  • 1 cup heavy cream
  • ½ cup chopped sun-dried tomatoes (drained)
  • ½ cup grated parmesan cheese
  • 2 teaspoons dried Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • Fresh chopped basil for garnish

Instructions

  1. Preheat your oven to 375°F.
  2. Season each chicken breast generously on both sides with kosher salt, black pepper, garlic powder, and onion powder, then set aside.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown. Remove the chicken and set aside.
  4. Reduce heat to medium and add 2 tablespoons of butter to the skillet. After it melts, stir in the minced garlic, cooking until fragrant (about 1 minute).
  5. Pour in the chicken stock, scraping up any bits stuck to the skillet. Stir in the heavy cream, sun-dried tomatoes, parmesan cheese, Italian seasoning, and crushed red pepper flakes.
  6. Let the sauce simmer for about 5 minutes until it thickens slightly.
  7. Return the chicken to the pan, spooning the sauce on top. Transfer the skillet to the oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F.
  8. Serve warm, garnished with fresh basil.

Notes

For additional flavor, consider swapping sundried tomatoes with roasted red peppers or adding a splash of lemon juice for brightness.
