  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat until it shimmers.
  3. Add the seasoned chicken breasts to the skillet; cook for 5-7 minutes on each side until they are golden brown and fully cooked. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, toss in the minced garlic, dried thyme, and dried oregano. Sauté for about a minute until the garlic is fragrant.
  5. Pour in the chicken broth and bring the mixture to a gentle simmer.
  6. Stir in the heavy cream, chopped sun-dried tomatoes, and grated Parmesan cheese. Cook until the sauce thickens slightly.
  7. Return the chicken to the skillet, ensuring it’s well-coated in the creamy sauce.
  8. Garnish with fresh basil before serving hot.

Notes

Let the chicken rest at room temperature for 15-20 minutes before cooking for even cooking. Use freshly grated Parmesan for the best flavor.
