A creamy and delicious chicken pasta dish perfect for impressing guests or enjoying a comforting family meal.

  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 oz pasta (fettuccine or your choice)
  • Parmesan cheese, grated for serving

Instructions

  1. Start by cooking the pasta according to the package instructions until al dente, then drain and set it aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic, sautéing until it becomes fragrant—about 1 minute.
  4. Season the chicken breasts with salt and pepper, then add them to the skillet. Sauté for 6-7 minutes per side until they are golden brown and fully cooked.
  5. Remove the chicken from the skillet and slice it into strips.
  6. In the same skillet, pour in the heavy cream and chicken broth.
  7. Add the sun-dried tomatoes, spinach, and Italian seasoning. Stir everything together and let it simmer for a few minutes, allowing the spinach to wilt.
  8. Return the sliced chicken to the skillet and gently combine all the ingredients.
  9. Toss the cooked pasta with the chicken and creamy sauce mixture until it’s well coated.
  10. Serve hot and generously sprinkle with grated Parmesan cheese.

Notes

For a lighter version, you can substitute heavy cream with a lighter cream or use vegetable broth instead of chicken broth.
