  • 12 oz dry pasta
  • 12 tbsp olive oil
  • 2 large chicken breasts
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 5 fresh garlic cloves, minced
  • 1/4 cup chopped sun-dried tomatoes
  • 1 1/2 cup chicken stock
  • 1 cup half & half
  • 1/2 cup freshly grated parmesan cheese
  • Fresh basil

Instructions

  1. Begin by boiling the pasta according to the package instructions, remembering to reserve some of the pasta water for later.
  2. In a small bowl, mix together the dried basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and black pepper.
  3. Rub half of the spice mixture onto both sides of the chicken breasts, ensuring they are well seasoned.
  4. In a large skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for about 5-7 minutes on each side, until they are golden brown. Once cooked, remove them from the skillet and set aside.
  5. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  6. Pour in the chicken stock, making sure to scrape up any flavorful brown bits from the bottom of the pan.
  7. Gradually stir in the half & half and parmesan cheese, stirring until you have a smooth sauce.
  8. Bring the sauce to a simmer, adding in the remaining spice mixture. Return the chicken to the skillet and let it simmer for 5-10 minutes.
  9. Slice the chicken and lay it over the pasta, mixing it with the sauce. Add reserved pasta water if needed to achieve your desired consistency.
  10. Garnish with fresh basil and additional parmesan cheese before serving.

Notes

Let the chicken rest after cooking for juiciness. Season pasta water for added flavor.
