  • 2 cups shredded rotisserie chicken
  • 2 tablespoons butter
  • 1/2 tablespoon all-purpose flour
  • 34 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1/3 cup dry white grape juice or chicken broth
  • 1 cup heavy cream
  • 1/3 cup sun-dried tomatoes, drained and chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/3 cup freshly grated Parmesan cheese
  • Fresh basil, chopped, for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta: Boil a large pot of salted water. Once boiling, add the pasta and cook according to package directions until al dente. Remember to reserve about 1 cup of the pasta water before draining.
  2. Prepare the base: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for approximately 1 minute, just until it’s fragrant. Sprinkle in the flour, whisking it together to create a roux, and let it cook for another minute.
  3. Incorporate tomato paste: Stir in the tomato paste, allowing it to cook for 1-2 minutes to enhance its flavor. Gradually whisk in your choice of white grape juice or chicken broth until the mixture is smooth.
  4. Add cream: Pour in the heavy cream and let it gently simmer for 3-5 minutes, stirring until the sauce thickens slightly. Mix in the chopped sun-dried tomatoes, dried oregano, and red pepper flakes.
  5. Combine chicken: Add the shredded rotisserie chicken to the skillet, tossing it in the sauce until heated through, around 2-3 minutes. Season with salt and freshly ground black pepper to taste.
  6. Mix with pasta: Incorporate the cooked pasta into the skillet, ensuring everything is well combined. Use reserved pasta water as needed to reach your desired sauce consistency.
  7. Finish with cheese: Stir in the freshly grated Parmesan cheese until it melts, creating a rich, creamy coating for the pasta. Serve immediately, garnished with freshly chopped basil for a bright, fresh finish.

Notes
