A creamy and flavorful chicken dish with sun-dried tomatoes and spinach that’s perfect for both weeknight meals and special occasions.

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup spinach, chopped
  • Parmesan cheese, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Sear the chicken breasts for 3-4 minutes on each side until they are beautifully golden brown.
  5. Remove the chicken from the skillet and set it aside.
  6. Add the chopped sun-dried tomatoes to the same skillet and cook for 1-2 minutes until fragrant.
  7. Pour in the chicken broth and heavy cream, stirring to bring it to a gentle simmer.
  8. Add the chopped spinach, stirring until it wilts.
  9. Return the chicken to the skillet, spooning the rich sauce over each piece.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and juices run clear.
  11. Serve topped with freshly grated Parmesan cheese.

Notes

For added flavor, consider marinating the chicken in lemon juice and herbs. Pair it with mashed potatoes or a crisp salad.
