Delightful bite-sized McGriddle Bites combining pancakes and sausage, perfect for brunch or snacks.

  • 2 cups complete pancake mix (just add water variety)
  • 1 ½ cups cold water
  • 1 pound ground breakfast sausage (cooked and crumbled)
  • 1 cup mild or sharp cheddar cheese (shredded)
  • ¼ cup pure maple syrup
  • Non-stick cooking spray (for greasing the tin)

Instructions

  1. Preheat your oven to 375°F (190°C) and thoroughly coat a mini muffin tin with non-stick cooking spray or line it with paper liners.
  2. Brown the ground breakfast sausage in a skillet over medium-high heat while breaking it into small crumbles. Drain the excess grease and set aside.
  3. Whisk together the pancake mix and cold water in a large bowl until no large lumps remain.
  4. Stir in the maple syrup and shredded cheddar cheese until evenly mixed.
  5. Fold the cooked sausage crumbles into the batter with a spatula, ensuring even distribution.
  6. Spoon the mixture into each muffin cup until they are filled about three-quarters of the way.
  7. Bake for 15-18 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Allow the bites to rest in the pan for a few minutes before carefully removing them to maintain their shape.

Notes

Serve with extra maple syrup or fresh fruit for an elevated experience. Store leftovers in an airtight container in the refrigerator for up to 3 days.
