Indulge in sweet maple syrup and savory sausage compacted into bite-sized muffins, perfect for breakfast or snacks.

Ingredients

  • 1 pound breakfast sausage
  • 2 cups Hungry Jack Pancake Mix
  • 1 cup water
  • 1/4 cup maple syrup
  • 1 cup cheddar cheese, shredded
  • 1/4 cup diced jalapeños
  • 1/2 cup blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your muffin tin.
  2. In a skillet over medium heat, brown the breakfast sausage until fully cooked, then drain excess grease and set aside.
  3. In a large mixing bowl, combine pancake mix, water, and maple syrup, mixing gently until just blended.
  4. Fold in the cooked sausage, cheddar cheese, jalapeños, and blueberries, being careful not to overmix.
  5. Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until the muffins rise and turn golden brown.
  7. Allow to cool for a few minutes before removing from the tin. Enjoy!

Notes

Serve warm with extra maple syrup or sour cream. Leftovers can be stored in an airtight container for up to 3 days.
