  • 1/4 cup feta cheese, crumbled
  • 1 medium tomato, diced
  • 1 cup fresh spinach, chopped
  • Salt and pepper to taste
  • 2 slices of whole grain bread or a bagel
  • Olive oil for cooking

Instructions

  1. Begin by heating a small amount of olive oil in a skillet over medium heat.
  2. Whisk the eggs with a pinch of salt and pepper in a bowl.
  3. Pour in the egg mixture and scramble until your desired doneness.
  4. Add the chopped spinach and diced tomatoes to the skillet and cook until the spinach is wilted.
  5. Place the egg and veggie mixture onto one slice of your bread or bagel.
