  • 2 tablespoons extra virgin olive oil
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, thinly sliced
  • 1 red onion, thinly sliced
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 cup crumbled feta cheese
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup toasted pine nuts
  • 1 pita bread, warmed and cut into wedges
  • 4 ounces hummus
  • 4 ounces baba ghanoush
  • 4 ounces tzatziki
  • Assorted crackers or baguette slices

Instructions

  1. Prepare the chickpea salad by mixing chickpeas, cherry tomatoes, cucumber, red onion, parsley, and mint. Whisk together olive oil, smoked paprika, garlic powder, salt, and pepper to create the dressing, then pour over the salad and toss. Allow it to marinate for at least 30 minutes.
  2. Curate the dips by placing hummus, baba ghanoush, and tzatziki in individual bowls. Drizzle olive oil over hummus and baba ghanoush. Garnish tzatziki with fresh dill if desired.
  3. On a large serving platter, spread crumbled feta cheese and scatter Kalamata olives and toasted pine nuts around it.
  4. Arrange warm pita wedges and assorted crackers/baguette slices on the board.
  5. Position the bowls of dip and drizzle with more olive oil. Just before serving, squeeze fresh lemon juice over the chickpea salad.

Notes

Chill the dips for best flavor and consider toasting the pine nuts to enhance their crunch.
