Mediterranean Chicken Skillet

An easy weeknight dinner bursting with flavor, combining tender chicken, colorful vegetables, and zesty seasonings in one pan.

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 3 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. Pat the chicken dry and season with smoked paprika, oregano, garlic powder, salt, and pepper.
  2. In a large skillet over medium-high heat, heat the olive oil and sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  3. Lower the heat to medium and add the sliced red onion, bell pepper, and zucchini. Sauté for 3–4 minutes until starting to soften.
  4. Stir in minced garlic, sun-dried tomatoes, cherry tomatoes, and olives. Cook for another 2 minutes.
  5. Return the chicken to the skillet, pour in fresh lemon juice, cover, and simmer for 5–7 minutes until fully cooked.
  6. Sprinkle with crumbled feta and garnish with fresh parsley before serving warm.

Notes

Pat chicken dry for a perfect golden crust and taste as you go to adjust seasonings.
