A healthy and flavorful one-pan Mediterranean dish featuring chicken and zucchini, perfect for family dinners.

  • 1 ½ pounds boneless, skinless chicken breasts, cut into chunks
  • 3 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup shredded mozzarella or Italian cheese blend
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken chunks and zucchini slices.
  3. Add the olive oil, minced garlic, lemon juice, oregano, basil, salt, and pepper. Toss everything until well-coated.
  4. Spread the mixture evenly in a 9×13-inch baking dish.
  5. Generously sprinkle the mozzarella and Parmesan over the top.
  6. Bake uncovered for 25-30 minutes, or until the chicken is fully cooked and the cheese is golden brown and bubbly.
  7. Once out of the oven, garnish with fresh parsley before serving.

Notes

For extra flavor, consider marinating the chicken in the olive oil and spices for a few hours before baking. You can substitute different vegetables or cheeses according to your preference.
