A vibrant and quick Mediterranean-inspired stir-fry packed with ground beef, fresh veggies, and feta cheese.

Ingredients

  • 1 lb ground beef (85% lean or higher)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (red or yellow), diced
  • 1 small zucchini, diced
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ¼ tsp red pepper flakes (optional)
  • ½ cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh lemon juice
  • ¼ cup crumbled feta cheese
  • ¼ cup toasted pine nuts
  • ½ tsp sumac (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the finely chopped onion and sauté for 2-3 minutes until it softens.
  3. Incorporate the minced garlic, cooking until fragrant—about 30 seconds.
  4. Add the ground beef, breaking it apart with a wooden spoon. Season with salt, black pepper, cumin, smoked paprika, oregano, and red pepper flakes. Cook until browned, roughly 5-7 minutes.
  5. Stir in the diced bell pepper and zucchini, cooking for an additional 5 minutes until tender-crisp.
  6. Fold in the cherry tomatoes and kalamata olives, cooking for another 2 minutes.
  7. Remove from heat and mix in the parsley and lemon juice. Adjust seasoning according to your taste.
  8. Serve immediately, topped with crumbled feta cheese and toasted pine nuts.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or in the microwave.
