A delightful one-pot pasta dish combining marinated chicken, cherry tomatoes, spinach, olives, and feta cheese with angel hair pasta.

Ingredients

  • 8 oz angel hair pasta
  • 1 lb juicy marinated chicken
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup olives
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 cup feta cheese, crumbled
  • Olive oil for cooking

Instructions

  1. Bring a large pot of salted water to a boil. Cook the angel hair pasta according to package instructions. Drain and set aside.
  2. In the now-empty pot, heat a splash of olive oil over medium heat. Add the marinated chicken and cook for 6–8 minutes until browned and fully cooked.
  3. Lower the heat and incorporate the minced garlic and halved cherry tomatoes. Sauté for 2–3 minutes until the tomatoes begin to soften.
  4. Add the fresh spinach and olives, stirring until the spinach wilts (about 1–2 minutes).
  5. Return the cooked pasta to the pot, squeeze fresh lemon juice over the top, and sprinkle with crumbled feta cheese. Toss everything together to combine.
  6. Serve warm and enjoy!
