A quick and satisfying Mediterranean pasta dish featuring juicy marinated chicken, fresh spinach, and tangy feta cheese.

  • 8 oz angel hair pasta
  • 1 lb juicy marinated chicken
  • 1 cup cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 cup olives, sliced
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Bring a large pot of salted water to a rolling boil. Cook the angel hair pasta according to package instructions until al dente. Drain and set aside, reserving about 1/4 cup of the pasta water.
  2. Return the empty pot to medium heat and add a drizzle of olive oil. Sauté the garlic until fragrant, about 30–45 seconds, being careful not to let it brown.
  3. Add the marinated chicken to the pot. Cook, stirring occasionally, until browned and cooked through, about 6–8 minutes.
  4. Stir in the cherry tomatoes, spinach, olives, and lemon juice. Cook just until the tomatoes soften and the spinach wilts, about 2–3 minutes.
  5. Add the cooked angel hair back into the pot and toss gently to combine, adding reserved pasta water if needed.
  6. Serve immediately topped with crumbled feta cheese.

This dish is perfect for meal prep and can be easily customized with different proteins or vegetables.
