Mini Meatloaf is a delightful twist on the classic comfort dish, bringing nostalgic flavors in perfectly portioned individual servings.

Ingredients

  • 1 lb ground beef
  • 1 cup Ritz crackers, crushed
  • 1 cup cheddar cheese, shredded
  • 1/2 cup onion, diced
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup BBQ sauce
  • 1/4 cup ketchup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Line a sheet pan with parchment paper or lightly grease it.
  2. In a large bowl, combine the ground beef, crushed Ritz crackers, shredded cheddar cheese, diced onion, milk, and egg. Season with salt and pepper. Mix gently until everything is just combined.
  3. Shape this mixture into small loaves and place them neatly on the prepared sheet pan.
  4. In a separate small bowl, whisk together the BBQ sauce and ketchup to create a glaze. Brush this mixture generously over the tops of each mini meatloaf.
  5. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Once baked, let them sit for about 3-5 minutes to rest before serving warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months. Reheat in the oven or microwave.
