A creamy, flavorful chicken dish with layers of mozzarella and fragrant basil, perfect for busy weeknights or special occasions.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 1 cup fresh mozzarella, sliced
  • 1 clove garlic, minced
  • 1 tablespoon Parmesan cheese, grated

Instructions

  1. Season your chicken. Generously sprinkle salt and pepper on both sides of the chicken breasts.
  2. Heat the oil. In a skillet over medium heat, add the olive oil and let it shimmer.
  3. Cook the chicken. Sear the seasoned chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and keep it warm.
  4. Sauté the garlic. In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
  5. Add the cream. Pour in the heavy cream and bring it to a gentle simmer, stirring occasionally.
  6. Mix in basil and cheese. Add the chopped basil and grated Parmesan cheese. Stir well to incorporate all the flavors.
  7. Return the chicken. Place the cooked chicken back into the skillet and layer the fresh mozzarella slices on top.
  8. Cover and simmer. Cover the skillet and let it simmer for 3-5 minutes until the mozzarella is melted and bubbly.
  9. Serve. Enjoy hot, garnished with extra fresh basil if desired.

Notes

Serve over creamy polenta or garlic mashed potatoes. Pairs well with a crisp white wine like Sauvignon Blanc.
