Easy-to-make no-bake cookies packed with nutritious ingredients for a healthy breakfast or snack.

Ingredients

  • 1 cup oats
  • 2/3 cup peanut butter
  • 1 1/2 Tbsp honey
  • 2 Tbsp shredded coconut
  • 1/4 cup chopped walnuts
  • 1 Tbsp sunflower seeds
  • 2 Tbsp chopped chocolate
  • 1/2 tsp coconut oil

Instructions

  1. Combine the peanut butter and honey in a bowl until smooth.
  2. Stir in the oats, chopped walnuts, sunflower seeds, and shredded coconut until incorporated.
  3. Using your hands, take about 1 1/2 tablespoons of the mixture and roll it into cookies or patties.
  4. Melt the chocolate with the coconut oil in a microwave-safe bowl, heating in 15-30 second intervals until smooth.
  5. Drizzle the melted chocolate over the cookies in a zigzag pattern.
  6. Place the cookies in the refrigerator for at least 1 hour to set.

Notes

Store cookies in an airtight container in the refrigerator for up to 4-5 days. They can also be frozen for up to a month.
