A classic and fluffy pancake recipe perfect for any breakfast or brunch occasion.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Extra butter or oil for cooking

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Mix the buttermilk, egg, and melted butter until smooth in another bowl.
  3. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  4. Preheat a non-stick skillet over medium heat and coat with butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form, then carefully flip and cook until golden brown.
  7. Serve warm with syrup or your favorite toppings.

Notes

Don’t overmix the batter! A few lumps are okay for fluffy pancakes.
