A quick and delicious one-pan chicken dish that combines balsamic vinegar, cherry tomatoes, and mozzarella for a flavor-packed meal.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Add the chicken to the skillet and sear for about 5 to 7 minutes on each side, until golden brown.
  5. Pour the balsamic vinegar over the chicken and bring it to a simmer.
  6. Scatter the halved cherry tomatoes on top, followed by the shredded mozzarella cheese.
  7. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Once removed from the oven, garnish with fresh basil and serve immediately.
