A delicious and creamy one pot pasta dish featuring tender chicken and rich Parmesan flavor, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 8 oz penne pasta (uncooked)
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil and butter over medium-high heat until melted.
  2. Add the diced chicken and season with salt, pepper, and Italian seasoning. Sear until golden brown and cooked through, then remove from the pot and set aside.
  3. Lower the heat and add the minced garlic to the same pot. Sauté until fragrant, about 1 minute.
  4. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  5. Stir in the uncooked penne pasta, cover, and let cook for 10-12 minutes, stirring occasionally, until the pasta is tender.
  6. Reduce the heat and mix in the Parmesan cheese until fully melted and the sauce is creamy.
  7. Return the cooked chicken to the pot, mixing everything together and warming it through for a couple of minutes.
  8. Garnish with fresh parsley if desired, and serve hot.

Notes

For a lighter version, you can substitute heavy cream with non-dairy milk. Feel free to add steamed broccoli or spinach for extra nutrients.
