  • 4 boneless, skinless chicken breasts, 6–8 oz each
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup olive oil (for marinade)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • ¼ teaspoon black pepper
  • Lemon slices (for garnish)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease a baking dish.
  2. Pat the chicken breasts dry with paper towels. Place them between two sheets of plastic wrap and gently pound them to an even thickness of about ¾ inch using a meat mallet or rolling pin.
  3. Mix together 2 tablespoons of olive oil, garlic powder, onion powder, paprika, oregano, salt, and black pepper until well combined in a small bowl.
  4. Rub the seasoning mixture evenly over both sides of each chicken breast, ensuring full coverage.
  5. For enhanced flavor, you can marinate the chicken: mix together ¼ cup olive oil, lemon juice, soy sauce, honey, Dijon mustard, minced garlic, and black pepper in a bowl. Let the chicken soak for 30 minutes to 2 hours in the refrigerator. Pat dry before proceeding.
  6. Arrange the seasoned chicken breasts on your prepared baking sheet, making sure they have some space apart.
  7. Bake for 18–22 minutes, or until the chicken reaches 165°F on an instant-read thermometer.
  8. Remove from the oven and let the chicken rest for 5 minutes before slicing. Garnish with lemon slices and fresh parsley if desired, and serve immediately.

Notes
