A comforting Oven Baked Chicken Parmesan that combines crispy chicken, rich marinara, and gooey cheese, perfect for family gatherings or weeknight dinners.

  • 2 tablespoons olive oil
  • 2 chicken breasts (about 1 pound total)
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons minced parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F and position your oven rack second from the top. Line a baking sheet with foil and brush it with olive oil.
  2. Cut each chicken breast in half and pound them to an even thickness for uniform cooking.
  3. Place chicken pieces in a zip-top bag and pound to achieve a consistent thickness. Pat dry and season both sides with kosher salt and black pepper.
  4. In a shallow dish, combine panko bread crumbs, parmesan cheese, dried oregano, garlic powder, salt, and pepper. In another dish, whisk the egg.
  5. Dip each chicken piece into the egg, letting any excess drip off, then coat thoroughly with the breadcrumb mixture. Arrange pieces on the prepared baking sheet.
  6. Bake for 15 minutes or until the chicken is cooked through, then flip each piece. Pour 1/4 cup marinara sauce over each piece and sprinkle with mozzarella cheese.
  7. Broil for an additional 2-4 minutes, or until the cheese is bubbly and golden.
  8. Serve your delicious creation with a fresh salad, pasta, or garlic bread.

Notes

For an extra layer of flavor, marinate the chicken in lemon juice and herbs for 30 minutes before cooking. Store leftovers in an airtight container for up to 3 days.
