Oven Baked Chicken Parmesan

A delicious and easy classic Italian dish featuring breaded chicken topped with marinara sauce and cheese.

  • 2 tablespoons olive oil
  • 2 chicken breasts (about 1 pound total)
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons minced parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with foil. Brush it with olive oil for extra flavor.
  2. Cut the chicken breasts in half horizontally and place them inside a zip-top bag. Pound them until they’re an even thickness for perfect cooking.
  3. Pat the chicken dry and season both sides generously with kosher salt and black pepper.
  4. Mix in one shallow dish panko breadcrumbs, parmesan cheese, garlic powder, oregano, salt, and pepper. In another dish, whisk the egg until well blended.
  5. Dip each piece of chicken into the egg, letting any excess drip off. Coat each piece generously with the breadcrumb mixture and place them on the prepared baking sheet.
  6. Bake the chicken for 15 minutes or until it’s cooked through.
  7. Flip the chicken pieces carefully, spoon marinara sauce over each, and generously top with shredded mozzarella cheese. Broil for 2-4 minutes, or until the cheese is bubbly and golden.

Notes

You can swap breadcrumbs for gluten-free options or use provolone cheese for an extra kick.
