A comforting and flavorful Oven-Baked Chicken Parmesan featuring crispy breaded chicken topped with marinara and cheese.

  • 2 large chicken breasts, sliced horizontally into 4 pieces
  • 1 cup fine breadcrumbs (plain or Italian-style)
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 tsp garlic powder
  • 1 large egg, beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • Salt and black pepper, to taste
  • Olive oil spray or 1 tbsp olive oil
  • Optional: dried oregano, basil, red pepper flakes, fresh basil or parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts horizontally into 4 thin pieces and season them with salt and pepper.
  3. In one bowl, beat the egg until it’s well-blended.
  4. In a separate bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  5. Dip each piece of chicken into the beaten egg, then dredge it in the breadcrumb mixture, ensuring it’s fully coated.
  6. Lay the breaded chicken pieces on a greased baking sheet and lightly spray with olive oil.
  7. Bake for 20 minutes, flipping halfway through for even cooking.
  8. Remove from the oven and top each piece with marinara sauce, mozzarella, and additional Parmesan cheese.
  9. Return to the oven and bake for another 5-10 minutes until the cheese is bubbling and golden.

Notes

For extra flavor, consider adding smoked paprika to the breadcrumb mixture or broil for a minute to achieve a golden cheese finish.
